1. Place all ingredients into a spiral mixer and mix for 3 minutes slow, 6 minutes fast.
2. Check the dough temperature is approximately 24℃.
3. Flatten to 2mm and dock.
4. Cut into 2” x 5” approximate length.
5. No proving.
6. Bake at 140℃ (284℉) for 60 minutes.
