Method

Note: The products need to be tempered to 20C - 22C before use, if not lumps may occur.

Approximate Mixing Times:

Slow Speed: 10-20 seconds.
Pettina Choux Paste Mix and water into a bowl.
Speed 01: Slowly add the eggs on, once blended scrape down.
Speed 03: 5-6 minutes until the batter is smooth.
Pipe into the desired shapes.

Process:
Baking Temperature : 225C
Baking Time: 20 - 25 minutes approx.

Usage

This quick and easy to prepare mix, needs only the addition of water and egg to produce a consistent, tolerant and smooth choux batter, which is easy to handle and pipe into controlled and regular shapes. Pettina Choux Paste Mix is ideal for the crosses on Hot Cross Buns.
